If you like to cook, you probably know Michael Ruhlman. If you are a fan of Anthony Bourdain, you probably know Michael Ruhlman. I don’t own Ruhlman’s latest cookbook, but I have made roast chicken using his recipe from that book, and I will probably never use any other method again.
I do own Ratio. My brother gave it to me for Christmas a couple of years ago, and I bought the Ratio app a couple of months later. It’s fantastic. The premise is great, and it works, and master recipes can be doubled, tripled, bazillionized—all because you are working off of ratios and relationships of ingredients.
But what really makes Ratio worth it, in my opinion, is the basic bread recipe. I’ve used it three weekends in a row, making ciabatta two of those weekends, and the results have been fantastic.
